4 bone-in Chicken thighs or breasts
kosher salt
Freshly ground black pepper
1 cup ranch dressing
2 tbsp. extra-virgin olive oil
5 garlic cloves, minced
1 chopped onion
3 1/2 cup chicken broth
2 cups uncooked white rice
1 cup baby spinach
1/4 cup chopped parsley

1. In a large mixing bowl season chicken with salt and pepper. Add ranch dressing and marinate for 5 to 10 minutes. Remove chicken from marinade

2. In a large skillet over medium-high heat, heat oil. Sear chicken until golden, about 5 min. on each side. Transfer to a plate. Reduce heat to medium and add garlic and onion, for 2 minutes. Stir in broth and rice and season with salt and pepper. Return chicken to rice mixture. simmer until rice is tender and chicken is cooked through. usually cooking for 20 minutes.

3. Stir in baby spinach and parsley and serve

I got 4 big chicken breasts and cut a few of bigger ones in half and fed 5 people, with left-overs.
