1 lb Stew Meat (cut into bite sized pieces)
1 can each: Corn, Diced Potatoes, Black-Eyed Peas, Carrots, Regular Cut Green Beans, Diced Tomatoes

Optional ingredients: Diced Onion, Diced Green Bell Pepper, Diced Jalapeno, Rotel (Diced Tomatoes and Green Chilies)

Directions:
Directions:
1. Season meat with salt and pepper. Brown meat until pink is gone.

2. Place meat in the crockpot (sprayed with cooking spray). Add enough water to cover the meat. Cook on high for one hour.

3. Drain liquid from corn, diced potatoes, carrots, and green beans. Do not drain liquid from tomatoes. Rinse black-eyed peas (optional). Add vegetables to meat. Add salt and pepper as desired. Add water to cover meat and vegetables. Continue cooking on high until meat is tender.

NOTE: Cover top of crockpot with a dish towel to help keep heat in and speed cooking.


Cornbread is great as a side dish.
