2 lbs. pork, cubed
1/2 tsp cooking oil
3 medium potatoes, peeled
1 1/2 Lg. onions, chopped
1 Clove garlic, minced
2 leaves fresh basil, chopped
1 leave fresh oregano,, chopped
1 10 oz. cans of diced tomatoes
8 green chilies, coarsely chopped
2 C. water

Directions:

Brown cubed pork over low heat in 1/2 tsp cooking oil.
In s separate pan, boil the whole potatoes for 5 minutes. Let them cool and cube.
Add tomatoes, green chilies, spices, water and s=simmer, covered for 1 hour. Now add the potatoes and simmer another 30 minutes.

Variations: Canned tomatoes now come with basil, garlic and oregano added. If you use this omit the ingredients from the recipe.
