1/4 cup cooking oil
1 cup sugar
2 eggs
1 tsp vanilla
1/2 cup coffee
1 cup chopped nuts
2 cups chopped fresh apple
1 cup raisins
2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt

Directions:
Directions:
Heat oven to 375 F.

Mix together the oil, sugar, eggs, vanilla and coffee. Stir in nuts, apples and raisins.
Sift dry ingredients together and add to batter.
Grease and flour an 8 x 12" cake pan. Place batter in pan, put in preheated oven and
bake for 20 - 25 minutes or until toothpick comes out clean.
