1 ¾ cups flour
2 tsp baking powder
1 tsp salt
2 Tbsp shortening or butter
⅔ cup cold water

Directions:
Start heating oil for frying. Sift flour, baking powder and salt in a mixing bowl. Cut in shortening or butter with a pastry blender. Add enough water to make a stiff dough. Turn the dough onto a lightly floured board and knead lightly until smooth. Cover with clean towel and let rest 10 minutes. Roll dough very thin (about 1/8" thick) into a 15 x 12" rectangle.
Cut into 3" squares. (a pizza cutter works really well for this step). When oil is hot (375 - 385º F) drop a few squares of dough into the oil. Turn frequently so that the sopaipillas will puff up evenly. Remove them with a slotted spoon and
drain on paper towels. Serve hot with honey.
