Ingredients:  
Ingredients:  
1/2 C. Olive oil
1 Lg or 3 Medium Eggplant, cubed
1 Lg. Onion
3 garlic cloves
1 Lg. Green Pepper (cut into strips)

Saute all above in oil
ADD:
8 Lg. peeled tomatoes or 1 qt. canned tomatoes
1 1/2 tsp. sugar
1 rounded Tbs. basil
1/2 C. parsley

Directions:

Simmer 30 minutes over medium heat till done

Stir in 1 C. Parmesan Cheese

let sit off heat 10 minutes


Serve over rice (salt & pepper to taste)
