Mrs. Harvey’s Coffee Cookies:

1 Cup Brown Sugar
1 Cup White Sugar
2 Eggs
1 Cup Lard
1 Cup Black Coffee mixed with Juice from raisins
1 tsp soda mixed in coffee
1 tsp baking powder mixed into flour
3 Cups Flour
2 Cups Seedless raisins cooked and drained
Pinch salt, spices, nuts, nutmeg and cinnamon

1. Cream sugar and lard, add eggs
Cook raisins in a little water (save the water from the raisins
and mix with the coffee). The raisin water should equal ½ cup
2. Add raisins to sugar and lard
3. Add flour, baking powder, eggs, nuts, spices and salt, coffee/raisin mixture.

This recipe is from mom’s (Doris Tulip Sargous) old recipe box that I found. They were in mom’s handwriting and she indicated they were from Mama (Dora Belle Wheeler Bugher). The recipes were well worn so I had to retype them. I never tried them so I can’t guarantee them, do they even sell Lard anymore?
