Roasted Cauliflower and Arugula Salad Recipe

The Baker Family


1 head cauliflower cut in small pieces
5 oz. arugula
2 tbsp. pine nuts
c. dried cherries or cranberries

2 tbsp. chopped cilantro
2 tbsp. chopped mint
1 tsp. agave nectar or honey
1 clove of garlic, minced
juice of one lime
zest of lime
4 tbsp. olive oil
tsp. salt

Preheat oven to 400. Place cauliflower on a cookie sheet. Drizzle with olive oil and sprinkle with salt. Roast for 20 to 25 minutes. Let cool.

Mix all dressing ingredients.
Place arugula in a bowl. Add cauliflower and remaining salad ingredients. Top with dressing and toss.
