2-3 pounds boneless, skinless chicken thighs
1 (16 oz. jar or larger if you like a lot of sauce) salsa, your choice of heat
Salt and pepper to taste
cooked rice, optional
Fresh toppers: cherry tomatoes, cut into fourths, chopped red onion, chopped bell pepper, grated cheese, sour cream, avocado slices or chunks

Grease the interior of a crock pot withnnonstick cooking spray.

Place the chicken in the prepared crock . Spoon the salsa on top.

Cover. Cook on low 4 to 4 1/2 hours or until meat reaches 175ºF when stuck in the center of the thigh. Add 1/4 c of water, or more, during the cooking time if necessary.

Place the thighs on a cutting board and shred with 2 forks. Stir the shredded meat and salsa together.

Season to taste with salt and pepper. Serve with rice if desired.
