1 1/2 Cups Oil
4 Eggs
2 Teaspoons Cinnamon
1 Teaspoon Baking Soda
3 Cups Carrots - grated or Parsnips
2 1/2 Cups Flour
1 Teaspoon Vanilla

Part 2-
Icing

1 - 8 ounce Package of Cream Cheese
1 - Pound Confectioners Sugar
1 Stick Margarine - softened
1 Cup Chopped Nuts

Directions:

Part 1-
Bake 3 layers 350* for 25 - 30 minutes.
Grease and flour pans.

Part 2-
Mix well until smooth enough to spread.
