1 c full fat canned coconut milk
1 T coconut vinegar or apple cider vinegar
4 large eggs
1/4 c + 1 T coconut flour
1 T golden flax meal
1/8 t salt
1 t baking powder
1 t cinnamon
coconut oil or butter for cooking

Directions:
Directions:
Mix coconut milk with vinegar and set aside. Whisk egg whites until they become thick and stiffen (should look like clouds that cling to the whisk with soft peaks).

Heat skillet to medium.
Mix together coconut flour, baking powder, salt and cinnamon. Whisk in flax. Stir in egg yolks slowly. Fold in the egg whites.

Cook in skillet.
