2 chicken breasts
3 T butter
salt and pepper to taste
1 t oregano
1 medium onion, minced
4 garlic cloves minced
1 small jar sundries tomatoes, drained and chopped
1/2 c chicken broth
1/2 c heavy cream (or nut pod dairy free)
1/3 c grated Parmesan cheese
1 c spinach

Directions:
Directions:
Season chicken with salt, pepper and oregano.

Melt 2 T butter in skillet, add chicken and cook about 4 minutes on each side until browned. Once chicken is done and no longer pink, set aside on plate.

In pan add remaining butte, onion, garlic, 1/2 t oregano and sun dried tomatoes. Slowly add chicken broth, cream and cheese and mix to combine until smooth. Simmer 2-3 minutes. Adjust seasoning with salt and pepper.
Add spinach to mixture and cook until wilted.
Add chicken back to pan and cook 2-3 minutes.
