1 lb White Pea Beans
4 cups cold water
1 onion - sliced
1/2 tablespoon Salt
2 Teaspoons cider Vinegar
1/2 teaspoon prepared dry mustard
1Tablespoon brown sugar
1/4 cup Molasses
1/2 cup Ketchup
1 pound Bacon
1/2 Cup BBQ sauce

Directions:
Directions:
Soak beans overnight in Cold Water. Drain and rinse beans
Add 4 cups cold water, cover, heat to boiling and reduce heat to simmer approx 30 min
brown and crisp bacon - add onion and saute until caramelized
Combine all ingredients in roaster/bean pot. bake at 300degrees for 3.5-4 hours carefully watching to be sure liquid is added to keep beans from getting to thick.
last 30 min remove lid to brown up.
(use one bottle/can beer in place of 1 cup of water)
