French bread
12-16 peeled and deveined shirmp
lettuce
tomato

for Shrimp

1 c bread crumbs
2 eggs beaten
2 Tbs cajun seasoning
1/4 tsp cayenne pepper powder


Remoulade sauce

1/2 c mayonnaise
1 minced garlic clove
1 Tbs finely chopped onion
1 Tbs dijon mustard
2 tsp lemon juice
1/2 tsp parsley
1/2 Tbs hot sauce
1/8 tsp cayenne pepper powder
1/8 tsp cajun seasoning
1/2 tsp paprika
1/8 tsp salt

Directions:

heat oven to 400

add breadcrumbs, and spices to a bowl

add eggs to another bowl

dunk each shrimp into egg then powder mixture

lay on baking sheet

bake 8-12 min or until shrimp are pink and coating is golden brown

Remoulade Sauce

add all ingredients to bowl and stir

refrigerate 1 hour

slice bread - toast (optional)

add lettuce, tomato, shrimp.

top with remoulade sauce
