4-8 lamb chops
2 Tablespoons margarine
2 Tablespoons soy sauce
6 oz. frozen orange juice concentrate
6-10 carrots, peeled and halved (optional)

Directions:
Melt margarine in large skillet. Brown lamb chops in margarine. Stir in soy sauce and orange juice concentrate. Turn flame to simmer and cover. Cook over low flame for 1 1/2 hours, turning chops occasionally to coat. Orange juice will thicken and turn into a dark glaze. If it becomes too thick, add a little water.

If you wish to serve glazed carrots with the lamb chops, after about 45 minutes, lay them on top of the chops and cook, covered, until done. Toss in the glaze before serving. Excellent served with sticky white rice.

This recipe is also good substituting pork chops or pork ribs.
