3 tbs olive oil, divided
2 lbs chicken thighs
salt and pepper to taste
1 lb red potatoes, cubed
2 tbsp butter softened
5 cloves garlic, chopped (more or less depending on your taste)
2 tbsp fresh thyme
2 tbsp fresh parsley
2 tbsp parmesan cheese, plus more for serving

Directions:

In a large skillet over medium-high heat, place 1 tbsp oil. Season chicken with salt and pepper and place in heated oil, and sear until golden brown on both sides (about 3-5 minutes per side)

In a large slow cooker, toss in diced potatoes, remaining 2 tbsp oil, butter, garlic, thyme, parsley, parmesan cheese, salt and pepper to taste. Stir and top with chicken. Cook on high 4 hours or low for 8 hours until potatoes are tender and chicken is cooked thoroughly. Place on plates and top with additional parmesan cheese and serve.
