1 Cup Sugar
1/2 Cup Oil
1 Cup (2-3 medium) Mashed Ripe Bananas
1/2 Cup Low Fat Plain Yogurt
1 teaspoon Vanilla
2 Eggs
2 Cups Flour
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 Cup Fresh or Frozen Blueberries (do not thaw)

Directions:

Preheat oven to 350º. Grease and flour bottoms only of three 6x3½ inch loaf pans.

In a large bowl, combine sugar and oil; beat well. Add bananas, yogurt, vanilla, and eggs; blend well. Add flour, baking soda, and salt; stir just until dry ingredients are moistened. Gently fold in blueberries. Pour into pans.

Bake 40-50 Minutes. Cool 5 minutes; remove from pans. Wrap tightly and store in refrigerator.
