20 Chicken wings split and tips discarded
⅓ Cup brown sugar
3 Cloves garlic, minced
½ Teaspoon fresh ginger
1½ Cup of water
3 Tablespoon of honey
2 Tablespoon of soy sauce
1 Tablespoon Cornstarch
½ Cajun Seasoning

Preheat the oven to 375ºF. Arrange the chicken wings on a baking sheet. Bake for 35 to 45 minutes until crisp. Transfer the wings to a baking dish. Mix together the brown sugar, garlic, ginger, 2 ½ cups of water, honey, and soy sauce in a saucepan over medium-high heat. Bring to a boil. Whisk together the cornstarch and cup of water in a small bowl, stir into the sauce mixture until thickened, and pour over the chicken wings to coat. Return wings to oven and bake for 15 to 20 minutes until the sauce is bubbling, the chicken is no longer pink at the bone, and the juices run clear.

Wow, everything happened so fast! Before I knew it, I was standing in the airport getting ready to board a flight with my kids and grandkids standing by me, all in tears. I was leaving my kids 1200 miles behind (my biggest fear!). I cried on the plane all the way to my destination and I had no shame. My thoughts were running wild.
