1 Large Chopped onion
1 Teaspoon of olive oil
1 Clove garlic, minced
½ Teaspoon ground cumin
4 Cups fat-free sodium chicken broth
1 Can cannellini beans rinsed
1 Cup Taco bell thick & chunky salsa
2 Cup shredded rotisserie chicken
1 Cup frozen corn, thawed
2 Green onions, chopped
¼ Cup chopped fresh cilantro
1 Cup shredded four cheese (Sharp, Mild, Colby, and Gouda)

Cook onions in hot oil, in a large saucepan on medium heat for 5 to 7 minutes, or until tender. Add garlic and cumin. Cook and stir for 2 to 3 minutes. Add broth, beans, and salsa and bring to a boil. Stir chicken and corn. Return to boil. Simmer for 5 to 10 minutes stirring occasionally. Stir in green onions and cilantro. Serve topped with cheese and chips. Yummy!!!
