Microwave Stuffed Peppers Recipe

Ingredients: 2 pounds ground beef 1 onion finely chopped 8 ounces tomato sauce ( or spaghetti sauce) grated parmesan cheese 3/4 tsp. salt 1/8 tsp. pepper 1 package uncooked instant rice 1 1/2 tsp. brown sugar 4 large green peppers

Directions:Place ground meat and onion in microwaveable 9x13 glass baking dish. Microwave on high for 3 minutes. remove from microwave and stir. Return to microwave and repeat process. Continue until meat has no pink.
Add half jar of the spaghetti sauce, the package of rice, salt, pepper and brown sugar.Microwave for 5 minutes.
Prepare peppers. Cut peppers in half lengthwise. Remove seeds and stems. Arrange pepper halves cut-side up in baking dish.
Spoon an equal amount f filling into each pepper half. Pour remaining spaghetti sauce over peppers, sprinkle with Parmesan cheese and cover with plastic wrap.
Microwave at high for 12 minutes. Check peppers for tenderness. If necessary continue to microwave until peppers are tender. Rotate dish once during cooking. Wait 5 minutes before serving.

Notes: I like to use jarred spaghetti it is not necessary to add additional seasonings.
We like this recipe since the peppers do not get mushy.
