4-5 tbsp sago or tapioca pearls
warm water to pre-soak sago
1/4 cup water for pot
1 1/4 cup whole milk (or milk of choice)
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
pinch clove
1/8 tsp cardamom (optional)
1/2 tsp mixed essence or 1/2 tsp vanilla + 1/4 tsp almond essence
2 tbsp brown sugar or condensed milk to sweeten

Directions:
Directions:
Place sago in a small bowl, quickly rinse with water and drain.
Pour enough warm water over sago, just enough to cover. Let it soak in the water for about 6-7 minutes.
In a small saucepan, bring 1/4 cup water to a boil. Add sago to pot, reduce heat and let simmer until water has almost evaporated.
Pour in milk, mixed essence, and spices.
Let mixture boil 10 minutes or until tapioca pearls are completely translucent. Add sugar or condensed milk to sweeten.
