Soufled lemon custard Recipe

1 stick, butter
1 1/2 cup sugar
6 eggs, separated at room temp
2/3 cup fresh lemon juice
2/3 cup flour
3 lemons, zested
2 cups milk
1 cup heavy cream
1/2 tsp salt

1. preheat oven to 350
2. cream together the butter and the sugar
3. add yolks, one at a time
4. beat in lemon juice, flour, and zest
5. add milk and cream and beat until combined
6. whip whites to soft peaks
7. stir in 1/4 cup of whites into lemon mixture
8. fold in the rest
9. pour into dishes
10. bake for 50-60 mins ~~ hot water bath~~ halfway up the sides
