1 cup butter
1 cup sugar
1/4 tsp. salt
1 egg yolk
1 tsp. vanilla
2 cups flour
1 egg white
1/2 cup chopped pecans

Directions:
Directions:
Cream sugar, butter and salt together until light and fluffy. Add egg yolk and vanilla and beat until smooth. Mix in flour. Dough will be stiff, and you will have to use your hands to work all the flour in. Pat dough out onto oiled 10x15 inch cookie sheet. It will be a thin layer of dough, but keep at it, there's enough dough to cover that pan. Whip egg white with a fork until foamy and spread over dough. Sprinkle with chopped pecans and press these into dough with hands. Bake at 300 until firm and dry, about 45 min. While still hot, cut in strips; then cut strips into rectangles. If you cut 1 x 2 inch bars, you will get about 50 cookies.
