4 egg whites, room temperature
4½ cups icing sugar
1 tsp. crème of tartar

Directions:
Directions:
Mix egg whites until frothy. Add icing sugar and creme of tartar an beat until smooth. Do not overbeat as this creates tiny air bubbles. Add more icing if necessary. You will want it stiff. Icing hardens quickly so cover with a wet tea towel to keep moist.
