1 small garlic clove, peeled
¾ c. packed parsley leaves
¾ c. packed basil leaves
5 tbsp. plus 2 tsp. extra virgin olive oil
1½ tsp. red wine vinegar
salt and freshly ground pepper
2 ripe avocados, pitted and peeled
1 tbsp. freshly squeezed lemon juice

Directions:

Place the garlic in a food processor, and pulse. Add the parsley, basil, 5 tablespoons of olive oil, vinegar, and salt and pepper to taste; puree. Set the sauce aside

Cut the avocados into ½ inch chunks. Toss with the lemon juice and remaining 2 teaspoons of olive oil.

Gently mix the avocados into the green sauce and serve with your favorite toasted bread or cracker.

This green sauce is an excellent version of a pesto sauce without nuts. I double the green sauce and toss with pasta.
