1 small garlic clove, peeled
c. packed parsley leaves, plus more for garnish
c. packed basil leaves
5 T. plus 2 tsp. extra virgin olive oil
1 tsp red wine vinegar
Salt and freshly ground pepper
2 ripe avocados, pitted and peeled
1 T. freshly squeezed lemon juice

Toasted baguette or your favorite crackers

Please the garlic in a food processor, and pulse. Add the parsley, basil, 5 T. olive oil, vinegar, and salt and pepper to taste; puree. Set the sauce aside

Cut the avocados into inch chunks. Toss with the lemon juice and remaining 2 tsp. olive oil.

Gently mix the avocados into the green sauce and serve with your favorite toasted bread or cracker.

This green sauce is an excellent version of a pesto sauce without nuts! I will double the green sauce and toss with pasta!
