1 c. shortening (Crisco)
1 c. light brown sugar (packed)
1 c. sugar
2 eggs, unbeaten
½ tsp. vanilla
1 ¼ c. flour
1 tsp. soda
½ tsp. salt
½ tsp. cinnamon
3 c. regular oatmeal (old fashion, not instant)
½ c. chopped walnuts (optional)
1 c. coconut
½ tsp. almond flavoring
Cream shortening, brown sugar, and sugar with a mixer. Add eggs, beating in well. Add vanilla. Sift together flour, soda, salt, and cinnamon. Add to creamed mixture gradually, beating in well. Stir in oatmeal and walnuts using a wooden spoon. Drop from a teaspoon onto a greased cookie sheet.
Bake at 350º for 8 to 10 minutes.
If making coconut variation, omit cinnamon, but add almond with mixer. Stir in coconut using a wooden spoon. Make dough into small balls and roll in sugar. Bake same as above.
