Strawberry Glaze Pie

4 cups fresh strawberries
1 cup water
3/4 cup sugar
3 tablespoons cornstarch
red food coloring
1 baked deep shell pie crust


Directions:
Directions:
Crush enough strawberries to measure 1/2 cup.
Blend together sugar and cornstarch in saucepan.
Add water, food coloring and crushed strawberries.
Cook, stirring continuously, until mixture thickens and boils for 1 minute.
Cool.
Lightly toss remaining strawberries with cooled mixture.
Pour into baked pie crust and refrigerate for several hours.
Top with Cool Whip or whipping cream.

NOTES : I usually double the glaze for the strawberries.
