1 15 oz can of pumpkin puree
3 egg yolks
1 large egg
1 14 oz can of sweetened condensed milk
1 tsp of cinnamon
1/2 tsp ground ginger
1/2 tsp fine salt
1/4 tsp grated nutmeg
1/8 tsp Chinese Five Spice...don't leave this out. I think it's the secret!
1 9" unbaked pie crust

Preheat oven to 425

Whisk together the pumpkin, egg yolks, and egg in a large bowl until nice and smooth. Add condensed milk, cinnamon, ginger, salt, nutmeg and 5-Spice and whisk until thoroughly combined.

Fit pie crust into pie plate and crimp the edges as desired

Pour filling into the pie shell and tap on the counter to get rid of air bubbles

Bake in oven at 425 for 15 minutes and then reduce the heat to 350 and cook for an additional 30 to 40 minutes.

Test doneness by sticking a paring knife into pie about an inch from the edge. It should come out clean. Cool before serving.

This pumpkin pie was devoured on Thanksgiving despite being in the company of no less than 6 other pies. I heard, "Best Pumpkin Pie Ever", from more than one person. I don't like pumpkin pie but I will take their word for it! None left for breakfast! We always have pie for breakfast the day after Thanksgiving...Doesn't everyone?
