3 lbs carrots (about 12 carrots)
cup olive oil
4 Tbsp of parsley
2 Tbsp of maple syrup
1 tsp orange zest
1 tsp of kosher salt
1 tsp of black pepper

Directions:
Directions:
Preheat oven to 400. Cut carrots on a bias. Spread evenly on a baking sheet coated with olive oil, salt and pepper. Bake for 20 minutes turning once. Remove carrots from oven add maple syrup and rerun to oven for 3-5 minutes. Carrot will be caramelized. Add orange zest and parsley. Serve immediately.

What to do with that Costco sized bag of carrots. I am foodie, I enjoy bold flavor, but I also do well with the simplicity of a single ingredient. This is the one vegetable that I made when my kids were younger that would vanish without a trace. Well, they left traces of parsley.
