3 cups flour
1/2 tsp salt
1/2 cup sugar
4 eggs
1/2 tsp lemon extract
1 cup milk, scalded
1 pkg yeast

Directions:
Directions:
Dissolve yeast in milk after it's cooled to lukewarm. Sift dry ingredients together.
Beat eggs till thick and lemon colored. Add lemon extract and milk mixture to beaten eggs.
Mix thoroughly. Stir in dry ingredients. Mix thoroughly.
Cover with clear wrap and let rise for about 2 hours.
Deep fry by the teaspoonfuls into hot grease, about 375 F and fry till golden brown.
Remove onto paper bags or paper towel. Put sugar into paper bag, then put hot malasada's into
bag of sugar and shake lightly then remove onto paper bag or paper towels again.
Best served hot or still warm or with ice cream.
