2 lbs of Granny Smith apples
2 lbs of Braeburn apples
1 teaspoon of Cinnamon
½ cup of granulated sugar
½ cup of unsalted butter
½ cup firmly packed brown sugar (light or dark)
2 pie crusts-your own recipe or store bought
1 egg white
Course sugar for top

Peel apples (or leave on skin) and cut into 2-inch-thick wedges. Toss apples with cinnamon and sugar. Melt butter in a 10-inch cast-iron skillet over medium heat; add brown sugar, and cook, stirring constantly (1-2 minutes or until sugar is dissolved). Remove from heat, place 1 piecrust in skillet over brown sugar mixture. Pour apple mixture over piecrust, and top with remaining piecrust. Make sure to try and push top crust down to meet bottom crust as much as possible. Whisk egg white until foamy. Brush top of piecrust with egg white; sprinkle with course sugar. Cut 4 or 5 slits in top for steam to escape. Bake at 350º for 1 hour or until golden brown and bubbly. Cool on a wire rack 30 minutes before serving. Serve warm with ice cream.

Several years ago I’d finally gotten a cast iron skillet, which I’d been wanting forever and this was my first recipe I made. It’s become a family favorite.
