Pound Cake

2 Cups Flour
3/4 teaspoon Salt
1/4 Cup Frozen Orange Juice Concentrate (thawed)
1/4 Cup Sour Cream
1 Cup Unsalted Butter (room temperature)
1 3/4 Cups Sugar
3 Large Eggs
4 teaspoons Grated Orange Peel
2 teaspoons Vanila Extract

Directions:
Directions:
Preheat oven to 350. Grease and flour 9x5x3 inch metal loaf pan.

Sift flour and salt into bowl. Whisk orange juice concentrate and sour cream in small bowl to blend. Using electric mixer, beat butter in large bowl until light and fluffy. Gradually beat in sugar. Add eggs 1 at a time, beating well after each addition. Beat in orange peel and vanilla. Beat in dry ingredients in 3 additions alternately with sour cream mixture in 2 additions.

Pour batter into prepared pan. Bake 1 hour 20 minutes. Cool cake in pan for 10 minutes. Turn out and cool completely.
 

Fresh Strawberry Sauce

1/4 Cup Orange Juice
1/4 Sugar
1/2 teaspoon Grated Orange Peel
3 8-ounce Packages Strawberries (hulled and sliced)

Directions:
Puree first 3 ingredients and 1 3/4 cups sliced strawberries in processor. Transfer puree to bowl. Fold in remaining strawberries. Cover and refrigerate.

Cut cake into slices and drizzle with sauce.
