1 cup yellow cornmeal
1 cup flour
2 Tbsp sugar
1 Tbsp plus 1 tsp baking powder
tsp salt
1 cup milk
cup shortening
2 eggs
1 can whole kernel corn, well-drained

Directions:
Directions:
Heat oven to 425. Grease 9 x 9 x 2 pan.
Blend all ingredients except kernel corn, about 20 seconds. Beat vigorously for 1 minute.
Stir in corn.
Pour into pan and bake 20-25 minutes or until golden brown.
