2 T. Dijon mustard
2 t. dried thyme
2 t. extra virgin olive oil
t. salt
t. pepper
1 - 2 lbs. bone-in chicken thighs, skin removed
2 sweet potatoes, peeled and cut into 1-in. cubes
1 large red onion, cut into slices

Directions:
Directions:
Preheat oven at 450
Combine mustard, thyme, 1 tablespoon oil and teaspoon each salt and pepper in a small bowl; spread the mixture evenly on chicken.
Toss sweet potatoes and onion in a bowl with the remaining 1 tablespoon oil and teaspoon each salt and pepper. Spread the vegetables on baking sheet. Place the chicken on top of the vegetables.
Bake for 30-35 minutes, stirring vegetables half way through.
