2 cups mashed potatoes
2 eggs
1⁄4 cup flour
salt
pepper
1 clove garlic
chives (optional)
cheese (optional)
butter for frying
sour cream or applesauce, for garnish (optional)

Directions:
Directions:
Mix mashed potatoes, egg, flour, salt, pepper, garlic, and any optional ingredients, into mashed potatoes.
Preheat skillet and add a couple of tablespoons of butter. Make sure the mixture is not too thin.
Pour 1/4 cup batter into hot pan; brown on both sides. Serve with sour cream or applesauce. Serves 2.

Mom used to make these the day after Thanksgiving. Love to make them and pour leftover gravy over them. Serve with fried stuffing and turkey. I like this better than the Thanksgiving dinner itself.
