1/2 cup vegetable oil
8 (6-inch) corn tortillas
1 (15.5-ounce) can refried beans ( 2 cups)
6 ounces cheddar cheese, shredded (1 1/2 cups)
8 large eggs
2 Tablespoons unsalted butter
Salt and Pepper

Toppings:
Chopped tomatoes
Minced red onion
Minced fresh cilantro
Diced avocado
Jarred sliced pickled jalapeno chiles, drained
Sour cream

Directions:
Directions:
Adjust an oven rack to the middle position and heat oven to 300 degrees. Heat the oil in a 12-inch nonstick skillet over high heat until the corner of a tortilla sizzles when dipped into the hot oil. Fry the tortillas, 2 at a time, until golden on both sides, about 3 minutes per side. Drain the tortillas briefly on paper towels, then spread them out over a baking sheet. Spread the refried beans evenly over the top of the fried tortillas and sprinkle with the cheddar cheese. Bake until the cheese has melted, about 10 minutes.

Meanwhile pour off the oil from the skillet, wipe the skillet clean, and return to the lowest possible heat. Crack 4 of teh eggs into two small bowls (2 eggs in each bowl). Add 1 tablespoon of the butter to the hot skillet and melt, swirling to coat the pan. Add the eggs to the pan simultaneously. Sprinkle the eggs with salt and pepper, cover and cook undisturbed for 2 minutes. Check the eggs, and if necessary, continue to cook, covered until the eggs have cooked through as desired, up to 3 minutes longer. slide the eggs onto a large plate, cover with foil, and set aside. Repeat with the remaining 1 tablespoon butter and 4 eggs.

Arrange the tortillas on individual plates and top with a fried egg. Sprinkle liberally with toppings before serving.
