2 Italian sausages, crumbled
1/4 C olive oil
10 oz. pkg frozen spinach, thawed and drained
1/3 to 1/2 lb. fresh sliced mushrooms
1 med onion chopped
1 C grated Parmesan cheese
1/2 t dried garlic
1/2 t basil
1/4 t marjoram
1 C grated Mozzarella cheese
Salt and pepper
Brown sausage, heat oil.
Add spinach, mushrooms, and onions (saute).
Preheat oven to 350 degrees.
Butter 2-quart casserole.
Combine eggs, 3/4 cup Parmesan, garlic, and seasonings in a medium bowl.
Mix well. Stir in sausage and vegetables.
Pour into baking dish.
Sprinkle with rest of cheese. Bake until set, 25 minutes.
If chilled, bake 30 to 40 minutes.
Can be made the night before and refrigerated.
For a larger group, double recipe.
