1.5 Medium sized yellow/sweet onions
1 stick butter
8 oz diced mild green chilies
12 oz sour cream
3 boxes Jiffy Corn Meal Muffin mix
3 eggs
1 cup milk
2 bags sharp cheddar

Directions:
Directions:
Coarsely dice onions and sauté them in butter until lightly browned. Add green chilies. Let mixture of onion and chilies cool to room temperature. Mix sour cream with one bag of sharp cheddar with the cooled onions and chilies and set aside. In a large bowl, add all 3 boxes of Jiffy, eggs, milk and mix thoroughly until there are no lumps. Pour mixture into a 12" baking tin. Dollop large scoops of sour cream mixture throughout the corn meal mix, do not mix in (the bread will bake around it).

Bake at 400º until top browns (about 35 minutes but maybe more). Once the top is browned, add the second bag of sharp cheddar across the top. Bake again until the cheese is melted. This is where you can improvise a little. I like to add bacon and green onions to the top for presentation and because…bacon. You can also top with Jalapenos for a little spice. This is best served as a side for a summer BBQ next to baked beans and coleslaw, but can also be enjoyed on its own.
