Rack of lamb or Lamb Loin Chops
Lots of Garlic, chopped
Lots of Fresh Thyme eaves
Just a touch of Fresh Rosemary, minced
Red Wine,
Olive oil
Salt and Pepper to taste

Directions:
Directions:
The day before, wash and pat dry the lamb. Massage with olive oil. Rub generously with the garlic, pepper and herbs. Place in a bag or bowl to marinate. Add the red wine (about a ½ C. give or take). Cover and marinate overnight. The next day, remove from fridge and season with salt. Let sit for about 30 minutes. Grill or roast until medium rare. Remove from heat and let sit a few minutes.

We never had lamb growing up because my mom hated it. Many years later, I tasted and learned how to cook lamb while managing a fleet of dining boats. Note: always make friends with the chef! These are so juicy and flavorful. We always cook on the grill outside so it won't smell in the house and bother my mom.
