Flapjacks:
1/2 c all-purpose flour
1/2 c quick cooking oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c buttermilk
1 egg

Topping:
1 c strawberries
2 bananas
1 (8oz) can pineapple tidbits
2 Tbsp orange juice

Directions:
Directions:
Blend dry ingredients together. Stir in buttermilk and egg. Mix with a wire whisk until batter is almost smooth (some lumps may remain). Spray a 390 griddle with a non-stick spray. For each pancake, pour a ladle full, about 2 Tbsp, on the hot griddle. Cook until pancakes are puffed and bubbles have burst on the surface. Flip and cook the other side until golden brown. For the topping: Top pancakes with sliced strawberries, banana slices and pineapple rainated with the orange juice. Makes 10 - 12 pancakes.
