1 medium or two small pie pumpkins (4 cups pureÚd pumpkin)
1 ╝ cups sugar
2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. ground allspice
1 tsp. ground ginger
1 tsp. salt
2 cans evaporated milk
4 eggs

2 pie crusts (store-bought or see p. ??)

1. Cut the pumpkin in half lengthwise. Remove stem. Scrape out and discard seeds. Place cut-side-down in a microwave-safe dish. Add 1 inch of water and microwave until tender (15-18 minutes). Depending on the size of your microwave, you may need to cook each half separately. Drain water and allow pumpkin to cool.

2. While pumpkin is cooling, preheat oven to 425║. Place pie crusts into two 9-10 inch pie dishes.

3. Once pumpkin is cool enough to handle, scrape out the flesh and pureÚ in a food processor or with an immersion blender until smooth. Measure four cups. If you have more, save it for another recipe.

4. Place pumpkin pureÚ and all other ingredients in a large bowl. Use a hand mixer to mix until thoroughly combined.

5. Pour pumpkin mixture into the two pie crusts, dividing evenly. Place in the oven and make for 15 minutes, then turn down to 350║ and bake another 45-60 minutes, until a knife inserted in the center comes out clean. You may need to place foil over the crust edges for the last 30 minutes to prevent over-browning.

6. Remove from oven and allow to cool completely. Serve with whipped cream. Refrigerate any leftovers

Pumpkin pie is my favorite Thanksgiving dessert! Making it from scratch with your own pumpkin is not much harder and much more rewarding than buying a can. You can use the whipped cream recipe on p. ??? if you want everything to be from scratch.

This recipe makes two pies, which is what I usually need for Thanksgiving. You can cut it in half if you just want to make one.
