Prawn Soup Recipe

300g cooked prawns
1 onion, chopped finely
1 carrot, chopped finely
1 celery stalk, chopped finely
50g butter
1L water
ŻL White Wine
1 T tomato paste
1 garlic clove
1 bay leaf
1 sprig fresh thyme
salt & pepper
pinch saffron
10ml fresh cream
1 egg yolk
Cognac (optional)

Heat butter over medium heat in saucepan and add vegetables for a few minutes. Add prawns water and wine. Stir in tomato paste garlic herbs, salt & pepper. Cover with lid and simmer for 20 minutes.Remove bay leaves and sprigs prawns and use immersion blender to purify soup and return prawns and serve warm.
