3 T extra virgin olive oil
6 3" meaty veal shanks ( about 6 pounds)
Sea salt and freshly ground black pepper
1 Medium onion
1 Rib celery minced
1 Carrot
3-4 C Chicken stock
4 Medium tomatoes, peeled, cored, seeded, and chopped.

Lemon Parsley Garnish

2 Plump fresh garlic cloves minced
C minced fresh flat leaf parsley leaves
Grated zest (yellow peel) of 2 lemons
