6-7 c. thinly sliced tart apples
1-2 tsp. lemon juice
2/3 c. to 3/4 c. sugar ( brown and white mixed)
1/4 tsp. Nutmeg
1/2 tsp. cinnamon
1/8 tsp. salt
1/2 tsp. grated lemon rind
1 T. butter

Preheat oven to 425º.
Mix all of the apple fie filling ingredients in a large mixing bowl. If filling seems really juicy, add a little flour. Place a single unbaked pie shell in pie plate. Add the filling mixture. Top with another single unbaked pie crust. Crimp the edges. Make 4 1” slits in the top with a knife. For brown crust, mix 1 egg with 2 T. milk and brush over the top crust. Bake at 425º for 10 minutes, then turn oven down to 350º, and bake 40-50 minutes more or until “ fork tender”.
