6-7 c. thinly sliced tart apples
1-2 tsp. lemon juice
⅔ c. to ¾ c. sugar (brown sugar and granulated mixed)
¼ tsp. nutmeg
½ tsp. cinnamon
⅛ tsp. salt
½ tsp. grated lemon rind
1 T. butter

Preheat oven to 425º.
Mix all of the apple fie filling ingredients in a large mixing bowl. If filling seems really juicy, add a little flour. Place a single unbaked pie shell in pie plate. Add the filling mixture. Top with another single unbaked pie crust. Crimp the edges. Make four 1” slits in the top with a knife. For brown crust, mix 1 egg with 2 T. milk and brush over the top crust. Bake at 425º for 10 minutes, then turn oven down to 350º, and bake 40-50 minutes more or until “ fork tender”.
