2 cups white vinegar
3 cloves garlic, peeled and crushed
1 Tbsp kosher salt
1 Tbsp granulated sugar
1 teaspoon smoked paprika
1 bunch think asparagus spears (about 1.25 lb)
1 medium shallot

Directions:
Directions:
1. Whisk together vinegar, garlic, salt, sugar and paprika in a small sauce it, bring to a boil and boil for one minute.

2. Trim the bottoms from asparagus spears and pack in a Ball jar. Top with sliced shallots.

3. Pout hot vinegar mixture over asparagus spears carefully adjusting spears so the they’re mostly (if not entirely) covered by the vinegar.

4. Let sit uncovered at room temperature for 3 hours then cover and refrigerate.
