4 egg whites
3/4 cup fine granulated sugar
4 egg yolks
1/2 tsp. lemon juice or extract
3/4 cup cake flour
1/4 tsp. salt
Jam, Jelly or pudding for the filling

Directions:
Directions:
1. Beat the egg whites until stiff.
2. Add the sugar in small amounts while beating slowly.
3. Beat egg yolks, then add lemon juice or extract.
4. Add the yolk mixture to the beaten egg whites and fold in using a spatula.
5 Fold flour into the egg white mixture in parts.
6. Pour into a cookie sheet lined with wax paper or parchment paper.
7. Bake at 350F for about 15 minutes or until lightly browned.
8. Turn out upside down onto a tea towel sprinkled with icing sugar. Roll up while still warm.
9. When the roll is cool, unroll and spread jam, jelly or pudding over the entire cake.
10. Roll up in the tea towel while still warm.
11. Slice into 1" slices and serve with whipped cream or fresh fruit.

I learned to make this in Home Economics class in High School. I like to fill it with lemon pudding mix as it is not as sweet as jam. It makes a nice light desert after a big meal.
