2 tbls olive oil
1/2 cup chopped red onions
1 small orange bell pepper, 1/2 diced
2 tbls butter
Kernels cut from 5 ears of corn (4 cups)
1 1/2 tsp kosher salt
1 tsp black pepper
2 tbls julianned fresh basil, minced chives, and/or minced fresh parsley

Heat olive oil in large sauce pan,add onion and saute 5 minutes, until onion is soft. Stir in bell pepper and saute for 2 more minutes

Add butter to the pan, add corn, salt, and pepper.

Cook, stirring occasionally for 5-7 minutes. Season to taste, Gently stir in basil or other herbs.
