4 Tbsp sugar
5 Tbsp flour
1/4 tsp salt
2 c milk
3 egg yolks, slightly beaten
1 c coconut
2 tsp vanilla
Baked 9 pie shell
Topping:

2 egg whites
1/2 c coconut
4 Tbsp sugar

Directions:
Directions:
Preheat oven to 350
Combine sugar, flour, and salt in double boiler; add milk and egg yolks, mixing thoroughly. Place over rapidly boiling water and cook 10 minutes, stirring constantly. Remove from boiling water, add 1 c coconut and vanilla.
Cool slightly, then turn into pie shell.
Beat egg whites until foamy-throughout. Add sugar a little at a time. Then beat until I turn forms a peak. Pile on filling; sprinkle with 1/2 c coconut.
Bake about 15 minutes.
