1 1/4 sifted all-purpose flour
3 teaspoons baking powder
1 Tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 cup milk
2 Tablespoons salad oil

Directions:
Directions:
Sift together dry ingredients. Combine egg, milk and salad oil; add to dry ingredients, stirring just till moistened. Bake on hot griddle, with melted butter. Makes about 12 dollar-size, or eight 4-inch pancakes. For thinner pancakes, add 2 tablespoons milk to batter.

For blueberry pancakes; When undersides of pancakes are nicely browned, sprinkle about 2 tablespoons blueberries over each cake. Turn and brown other side.

For buttermilk pancakes: Substitute buttermilk for sweet milk. Add 1/2 teaspoon baking soda and reduce baking powder to 2 teaspoons. Bake on hot griddle.
